Ingredients:
Cleaned quail, washed well, drained of water
A medium-sized onion, chopped very finely
3 garlic cloves, finely minced
Two tablespoons of lemon juice
A small spoon of white vinegar
A quarter teaspoon of ground black pepper
A small pinch of finely ground cardamom
A small pinch of finely ground rosemary
A small splash of paprika
Salt to taste
A cup of white flour
Half a cup of starch
3 cups of vegetable oil
The way the quail works:
1- In a large bowl, mix onions, garlic, vinegar, lemon juice, black pepper, a pinch of salt, cardamom, rosemary and paprika and stir well.
2- Place the quail in the bowl and mix it well with the mixture to cover it completely, then leave it to marinate for at least an hour.
3- Remove the quail from the seasoning, then drain it slightly.
4- In another bowl, mix the flour with the starch and a pinch of salt.
5- Dip each piece of quail in the flour mixture until it is completely covered.
6- In a saucepan, put the oil, then fry the quail and leave it until it turns golden brown over low heat for a quarter of an hour.
7- Take the quail out of the oil and place it on kitchen paper towels, then serve it hot.
